Allergy Friendly Chocolate Chip Cookies
Over the last couple of years we have incorporated more gluten and dairy friendly recipes into our family's Sunday baking. And this one's a classic fav. Lightly sweet, has a great crunch and chew to it, and satisfies that "oh gotta have it" need for a good chocolate chip cookie. Enjoy!
Pre-heat oven to 375
Mix/sift together and set aside
2 1/2 Cups gluten free flour blend (Namaste or Pamela's)
1 tsp. Baking soda
1 tsp Salt
1 tbsp. xantham gum (bob's red mill or other)
2 Tbsp Tapioca Starch
Beat together until creamy
1 cup dairy free butter (I use smart balance vegan buttery sticks)
3/4 cup sugar
3/4 cup packed brown sugar
1 tsp vanila extract
Then add one a time, beating well after each addition
2 eggs
Add dry mixture to wet and blend well.
Slowly mix in until evenly incorporated
1 cup dairy free chocolate chips (I use Enjoy Life or Simple Truth Organic brand)
Roll or shape into 1 inch balls and bake for 8-10 minutes or until lightly golden brown on the ended. Let sit on warm cookie sheet until cool. Yields about 36 cookies
