Creamy Dairy Free Ice Cream
I've been a little obsessed with this recipe!!! I'm usually not even a big ice cream person, and most of the time would get a stomach ache from eating it anyway, but finding a way to make a healthier dairy free version I could easily make at home, while leaving out all of the gums, sugars, artificial sugars and dairy that tends to hurt my stomach... made for a perfect combo we have all been enjoying again and again!
It's super easy with only 5 ingredients, and you can make up batches ahead of time and freeze until needed, plus it tastes creamy and amazing, you'll want to make it again and again too!
- 1 can coconut milk
- 1/2 cup almond, oat or nut milk of choice
- 1/4-1/2 cup pure maple syrup, or sweetener of choice (sweeten to your preference)
- 1/8 tsp pink Himalayan salt
- 1 tsp organic vanilla extract
Be sure to use regular, not lite coconut milk or coconutmilk beverage. Sweeteners that work include pure maple syrup, coconut sugar, or honey.
Stir all ingredients together in a bowl, then pour and freeze the mixture in ice cube trays. Freeze Overnight, then blend the frozen ice cubes in a high-speed blender such as a Vitamin or blendtec. You can 1 cup frozen blueberries, frozen banana or other frozen mix-in of choice for added flavor.
Or just top with berries, coconut flakes, pineapple, cocao nibs, etc and enjoy the ice cream as is!!
