Gluten Free Maple Chia Pascha Chip Cookies
Nothing better than finding a way to incorporate some healthy sweet bites into your life with good recipes. I felt like a kid making these the other night, licking the spoon, enjoying the dark chocolate goodness mixed in and loving how many tasty ingredients are in this baked goodness.
Maple, Chia Pascha chocolate chip cookies! They were literally a recipe off the back of the pascha chip bag... and sooo good!
1 tbsp. Chia seeds
3 tbsp. water
1/2 cup pure maple syrup
1/2 cup butter replacement (used room temperature ghee)
2 tsp organic vanilla extract
1 1/2 cups gluten free flour mix (used 1 cup banana flour and 1/2 cup almond flour)
1/2 tsp baking powder
1/4 tsp sea salt
1 cup pascha chocolate chips
Preheat oven to 325. In a small bowl, combine chia seeds with water and let sit until “gluey” consistency forms, about 2-3 minutes. In a seperate bowl, blend butter replacement and maple syrup until well blended. Add the chia seed mixture and the vanilla extract and best for another 2 minutes. Add gluten free flour mix, baking powder and salt. Mix well. Stir in pascha dark chocolate chips.
Bake at 325 for 10-15 minutes. Makes 15-20 cookies
